If you want your phone with you, but do not want to be tracked until/unless you want to use it (i.e., doing something that you do not want tracked).
Faraday Bags are also good for key fobs and credit cards ...

Perhaps you also do not understand why you would want to put your key fob or credit cards inside a Faraday Bag.

Normal iPhone 'Airplane mode' does allow a subset of local wireless radio functionality.
iPhones have two levels of airplane mode. One leaves Bluetooth (Airpods, maybe Apple Watch) and local WiFi (AirDrop) alive, the next level turns the radios off pretty much completely. Both modes disable the cellular function - no voice, no SMS, no data service.
If I was concerned about my keyless entry car being stolen I would indeed use a faraday cage for the key fob.
Same for chiped cards in my wallet. I am in Canada, so my card chip signals are not useful without my PIN. Which I keep in a different cage.
